Italian Sausage with Peppers and Onions

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the Italian sausages and cook, turning occasionally, until browned and cooked through (about 10-12 minutes). Remove from the skillet and set aside.
Sauté the Vegetables:

In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onion. Sauté over medium heat for about 8-10 minutes, until the vegetables are soft and starting to caramelize.
Add the minced garlic and cook for an additional minute, until fragrant.
Season and Combine:

Stir in the dried oregano, dried basil, and crushed red pepper flakes (if using). Season with salt and black pepper to taste.
Pour in the chicken broth or water, stirring to combine. Allow the mixture to simmer for a few minutes to help the flavors meld together.
Return the Sausages:

Slice the cooked sausages into 2-inch pieces and return them to the skillet with the peppers and onions. Stir to combine and heat through for another 3-5 minutes.
Serve:

Transfer the sausage mixture to a serving platter or individual plates. Garnish with freshly chopped parsley.
Serve with Italian rolls for sandwiches or over pasta for a complete meal.
