In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausages and cook, turning occasionally, until they are browned on all sides and cooked through, about 10-12 minutes. Once done, remove the sausages from the skillet and set aside.
2. Sauté the Vegetables
In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced bell peppers and onions to the skillet. Sauté the vegetables over medium heat until they soften and start to caramelize, about 8-10 minutes. Sprinkle with garlic powder, oregano, salt, and pepper. Stir to coat the vegetables with the seasoning.
3. Combine and Heat Through
Slice the cooked sausages into bite-sized pieces (or serve whole if preferred). Add the sausage pieces back into the skillet with the peppers and onions. Stir everything together and cook for an additional 2-3 minutes to heat through.
4. Serve
Garnish with fresh basil or parsley, if desired. Serve hot and enjoy!
