Preheat your oven to 180°C (350°F).
Assemble the Sandwiches:
Spread a thin layer of pesto on one side of each of 4 slices of cornbread.
Layer with 1 slice of ham, several tomato slices, and a generous sprinkle of grated mozzarella.
Season with salt and pepper.
Top each sandwich with another slice of cornbread.
Add Butter:
Lightly spread butter on the top side of each sandwich.
Bake:
Place the sandwiches on a baking sheet lined with parchment paper.
Bake for about 10 minutes, or until the tops are golden and the cheese is melted.
Serve:
Let the sandwiches cool slightly.
Cut diagonally and serve warm.
