Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with paper liners for easy removal.
Prepare the Brownie Batter:
In a large mixing bowl, whisk together the melted butter and granulated sugar until smooth.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
Sift in the cocoa powder, flour, salt, and baking powder. Mix until just combined, making sure not to overmix the batter.
If desired, fold in the mini chocolate chips and chopped nuts.
Fill the Muffin Tin:
Spoon the brownie batter into the mini muffin tin, filling each cavity about three-quarters full. The batter will spread while baking, so no need to level it out perfectly.
Bake:
Bake for 10-12 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Be careful not to overbake; you want the bites to remain fudgy.
Cool and Serve:
Let the brownie bites cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
Once cooled, they’re ready to be devoured!
