Irish Cabbage, Bacon, and Potato Casserole


Boil cubed potatoes in salted water until tender (about 15–20 minutes). Drain, mash with 30g butter and 250ml milk. Season with salt and pepper.

Prepare the Bacon and Veggies:
In a large pan, cook bacon until crispy. Remove and set aside.
In the same pan with some of the bacon fat, melt 50g butter. Sauté onion and garlic until translucent. Add chopped cabbage and cook until soft (8–10 minutes). Season with salt and pepper.

Combine Layers:
Stir the bacon back into the cabbage mix. Add green onions, parsley, and dill.
In a greased baking dish, layer the mashed potatoes, followed by the cabbage and bacon mixture. Top with grated cheese.

Make the Crust:
Mix crushed crackers, panko breadcrumbs, and 50g melted butter. Sprinkle evenly over the top.

Bake:
Bake at 190°C (375°F) for about 20 minutes, or until golden and bubbling.
