Instant Pot Lima Beans and Ham: A Hearty, Flavorful Comfort Dish

Rinse the dried lima beans thoroughly to remove any dust or debris. No need to soak the beans beforehand, as the Instant Pot will cook them to perfection.
Sauté the Aromatics:

Set the Instant Pot to the “Sauté” function. Add the olive oil to the pot and heat.
Add the chopped onion and cook for 3-4 minutes until softened.
Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the Ham and Spices:

Add the diced ham (or ham hock) to the pot and cook for 2-3 minutes to lightly brown it.
Sprinkle in the smoked paprika, dried thyme, and black pepper. Stir to coat the ham and vegetables with the spices.
Cook the Beans:

Add the rinsed lima beans, chicken broth, water, and bay leaf to the Instant Pot. Stir everything together.
Close the Instant Pot lid, making sure the valve is set to “Sealing.”
Set the Instant Pot to cook on high pressure for 30 minutes. Once the cooking time is complete, allow the pressure to release naturally for about 10-15 minutes, then quick-release any remaining pressure.
Season and Serve:

Open the Instant Pot and remove the bay leaf.
Taste the lima beans and ham, and add salt as needed to adjust the seasoning.
Stir gently to combine the ingredients, and serve hot.
