Mix wet ingredients: In a separate bowl, whisk together the milk, egg, plain yogurt, and olive oil until smooth.
Combine: Gradually pour the wet mixture into the dry ingredients, stirring gently to combine. Be careful not to overmix; you want the batter to be just combined.
Add spinach: Stir in the chopped baby spinach until evenly distributed throughout the batter.
Cook the fritters: Heat a little olive oil in a large skillet over medium heat. Spoon about 2 tablespoons of the batter into the pan for each fritter. Flatten slightly with the back of a spoon. Cook for about 2-3 minutes on each side, or until golden brown and crispy.
Serve: Once cooked, remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve warm.
