Incredibly Delicious & Nutritious Potato Meal

Peel the potatoes and cut them into bite-sized cubes.

Heat the plant oil in a large skillet over medium heat. Add the potato cubes and cook them until golden and crispy on the outside and tender on the inside (about 10-12 minutes). Stir occasionally to ensure even cooking.

Cook the Vegetables and Chicken:

In another pan, melt the butter over medium heat. Add the chopped onion and sliced carrot and sauté until they begin to soften (about 5 minutes).

Add the minced garlic, bay leaves, and sliced mushrooms. Cook for another 3 minutes, allowing the garlic and mushrooms to release their flavors.

Add the diced chicken fillet to the pan and cook until it is browned and cooked through, about 8 minutes. Season with salt, pepper, and Provencal herbs to taste.

Prepare the Broccoli:

While the chicken and veggies cook, steam the broccoli until tender (about 5 minutes). You can do this in a steamer or by microwaving it with a bit of water in a covered dish.

Combine Everything:

Once the potatoes are cooked, add the chicken and vegetable mixture to the pan with the potatoes. Stir to combine, letting the flavors meld together.

Add the steamed broccoli and mix gently.

Add the Eggs:

Push the potato mixture to the sides of the pan to create a space in the center. Crack the eggs into the center and cook them to your desired level of doneness (you can scramble them or cook them sunny-side up for extra texture).

Top with Cheese:

Once everything is cooked, sprinkle the cheese over the top of the potato mixture. Cover the pan for 1-2 minutes to allow the cheese to melt and become gooey.
