Grate the zucchini, carrot, and potato using a fine grater. Place them in a large bowl.
Tip: To remove excess moisture from the zucchini and potato, squeeze the grated veggies with your hands or use a clean kitchen towel.
2. Combine the Ingredients:
Add the oatmeal, cheese, minced garlic, and chopped parsley to the grated vegetables. Mix everything together well.
Season with ground black pepper and salt to taste.
Stir the mixture until it holds together. If it feels too wet, you can add a little more oatmeal to help bind the ingredients.
3. Shape the Patties:
Take small portions of the mixture and shape them into patties with your hands. You should get about 6-8 patties, depending on the size.
4. Cook the Patties:
Heat a bit of olive oil in a pan over medium heat.
Place the patties in the hot oil and cook for about 3-4 minutes on each side, or until golden brown and crispy.
5. Serve:
Once the patties are done, remove them from the pan and place them on a paper towel to drain any excess oil.
Serve hot with a side of fresh salad, dip, or enjoy them on their own!
