HUGE POT of Chili at Home: The Ultimate Comfort Food

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it up into small pieces with a spoon. Drain any excess fat.
Step 2: Sauté the Vegetables

Add the chopped onion, bell pepper, and garlic to the pot. Cook for about 5-7 minutes, or until the vegetables have softened and the onions are translucent.
Step 3: Add the Tomatoes and Beans

Stir in the diced tomatoes, tomato paste, kidney beans, black beans, and green chilies. Mix well to combine.
Step 4: Add the Spices and Broth

Add the chili powder, cumin, paprika, cinnamon (if using), black pepper, and salt to taste. Pour in the beef or vegetable broth and stir everything together. Bring the chili to a simmer.
Step 5: Simmer and Let the Flavors Develop

Reduce the heat to low and let the chili simmer for at least 30 minutes, stirring occasionally. If you have time, let it simmer for longer (1-2 hours) to deepen the flavors. Add the hot sauce for extra heat if desired.
Step 6: Add Optional Corn and Adjust Seasoning

About 10 minutes before serving, add the frozen corn to the chili, if using. Taste the chili and adjust the seasoning with more salt, pepper, or chili powder if needed.
Step 7: Serve

Serve the chili hot with your favorite toppings such as shredded cheese, sour cream, chopped green onions, or a squeeze of lime. Enjoy with cornbread, tortilla chips, or a simple side of rice!
