Honey Mustard Chicken with Garlic Mashed Potatoes & Broccoli

Preheat Oven: Preheat your oven to 400°F (200°C).

Make the Marinade: In a bowl, whisk together honey, Dijon mustard, olive oil, minced garlic, salt, and pepper.

Marinate Chicken: Place the chicken breasts in a baking dish and pour the honey mustard sauce over them, coating well.

Bake: Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C). Baste with the sauce halfway through.

Prepare the Garlic Mashed Potatoes:
Cook Potatoes and Garlic: In a large pot, add cubed potatoes and garlic cloves. Cover with water and bring to a boil. Cook for 15-20 minutes until potatoes are tender.

Mash: Drain and return the potatoes and garlic to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy.

Cook the Broccoli:
Steam: In a pot with a steamer basket, bring water to a boil. Add broccoli, cover, and steam for 5-7 minutes until tender but still vibrant green.

Season: Season with salt, pepper, and drizzle with olive oil if desired.
