Honey Mustard Chicken with Cheesy Roasted Asparagus and Potatoes

In a small bowl, mix together honey, Dijon mustard, olive oil, garlic powder, salt, and pepper to create the glaze.
Place the chicken breasts on a baking sheet lined with parchment paper. Brush the chicken with the honey mustard glaze, making sure to coat each breast evenly.
Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). Baste the chicken with the glaze halfway through for extra flavor.
Step 2: Roast the Garlic Potatoes
While the chicken is baking, prepare the potatoes. Place the cubed potatoes on a baking sheet and toss them with olive oil, garlic powder, dried rosemary, salt, and pepper.
Roast the potatoes in the oven at 375°F (190°C) for about 30-35 minutes, flipping halfway through, until golden brown and crispy.
Step 3: Prepare the Cheesy Roasted Asparagus
Trim the asparagus and toss them with olive oil, salt, and pepper.
After the potatoes have been roasting for about 15 minutes, add the asparagus to the baking sheet with the potatoes.
Roast the asparagus for another 10-15 minutes, or until tender and slightly crispy.
Sprinkle the shredded cheddar cheese over the asparagus in the last few minutes of roasting, allowing it to melt.
Step 4: Assemble and Serve
Once everything is ready, plate the honey mustard chicken, garlic roasted potatoes, and cheesy roasted asparagus.
Serve immediately, and enjoy your indulgent yet healthy meal!
