Preheat your oven to 400°F (200°C). Toss the cubed sweet potatoes with olive oil, salt, and pepper.
Spread them on a baking sheet and roast for 20 minutes, flipping halfway through for even cooking.
2️⃣ Cook the Sausages:
While the sweet potatoes are roasting, heat a large pan over medium heat. Cook the sliced sausages until browned on all sides, about 5-7 minutes. Once done, remove the sausages from the pan and set them aside.
3️⃣ Make the Honey Garlic Glaze:
In the same pan, sauté the minced garlic until fragrant (about 1 minute). Stir in the honey and soy sauce, letting it simmer for 1-2 minutes to thicken the glaze.
4️⃣ Combine & Serve:
Add the sausages back into the pan and toss to coat them in the honey garlic glaze.
Once the sweet potatoes are roasted, mix them with the glazed sausages.
Garnish with fresh parsley and serve warm!
