Honey-Glazed Roasted Brussels Sprouts with Bacon: A Sweet and Savory Side Dish

Preheat your oven to 400°F (200°C).
Trim the ends off the Brussels sprouts and slice them in half. Toss the Brussels sprouts with olive oil, salt, pepper, and garlic powder (if using) in a large bowl.
Spread the Brussels sprouts in a single layer on a baking sheet, cut-side down for maximum crispiness. Roast for 20-25 minutes, or until golden brown and tender, flipping halfway through for even cooking.
Cook the Bacon:

While the Brussels sprouts are roasting, cook the bacon in a skillet over medium heat until crispy. This should take about 5-7 minutes. Once cooked, transfer the bacon to a paper towel-lined plate to drain any excess fat. Set aside.
Make the Honey Glaze:

In a small saucepan, combine the honey, balsamic vinegar, Dijon mustard (if using), and red pepper flakes. Bring to a simmer over medium heat and cook for 3-4 minutes, stirring occasionally, until the glaze thickens slightly.
Assemble the Dish:

Once the Brussels sprouts are done, remove them from the oven and transfer them to a serving dish. Drizzle the honey glaze over the Brussels sprouts and toss to coat evenly.
Sprinkle the crispy bacon over the top and give everything a final toss.
