Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
Prepare the Brussels Sprouts:
Trim the ends of the Brussels sprouts and remove any damaged outer leaves. Slice them in half from top to bottom.
Roast the Brussels Sprouts and Bacon:
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and pepper until evenly coated. Spread them out in a single layer on the prepared baking sheet.
Scatter the chopped bacon over the Brussels sprouts.
Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are golden brown and crispy on the edges, and the bacon is crispy.
Make the Honey Glaze:
While the Brussels sprouts and bacon are roasting, whisk together the honey, Dijon mustard, apple cider vinegar, garlic powder, and crushed red pepper flakes (if using) in a small bowl.
Glaze the Brussels Sprouts:
Once the Brussels sprouts and bacon are done roasting, remove them from the oven. Drizzle the honey glaze over the Brussels sprouts and bacon mixture, tossing gently to coat. Return to the oven for another 5-7 minutes to allow the glaze to caramelize slightly and enhance the flavors.
Serve and Garnish:
Transfer the honey-glazed Brussels sprouts with bacon to a serving platter. Garnish with freshly chopped parsley for a pop of color and extra flavor.
