Pat the pork tenderloins dry with a paper towel. Season generously with salt and pepper.
Sear the Tenderloin:
Heat olive oil in a large skillet over medium-high heat.
Sear the pork tenderloins on all sides for about 2-3 minutes per side until golden brown. Once seared, remove from the skillet and set aside.
Make the Honey Garlic Glaze:
In the same skillet, lower the heat to medium.
Add soy sauce, honey, minced garlic, Dijon mustard (if using), and apple cider vinegar.
Stir to combine, then let the glaze simmer for 2-3 minutes, until it slightly thickens.
Cook the Pork in the Glaze:
Return the seared pork tenderloins to the skillet, spooning the glaze over the meat. Cover and cook for an additional 10-12 minutes, or until the pork reaches an internal temperature of 145°F (63°C). The glaze should be thick and sticky.
Serve:
Once cooked, remove the tenderloins from the skillet and let them rest for a few minutes before slicing.
Optionally, garnish with chopped parsley or sesame seeds.
