Bring a pot of salted water to a boil. Add the cubed potatoes and cook until fork-tender (about 15 minutes).
Drain the potatoes and return them to the pot. Add butter, milk, garlic powder, salt, and pepper.
Mash until smooth and creamy. Adjust seasoning if needed. Cover and set aside.
Step 2: Cook the Pork Chops
Pat the pork chops dry and season with salt, pepper, and smoked paprika.
Heat olive oil and butter in a large skillet over medium heat. Add the pork chops and cook for 4-5 minutes per side until golden brown and cooked through (internal temperature should reach 145°F/63°C). Remove from the skillet and set aside.
Step 3: Make the Honey Garlic Sauce
In the same skillet, add the minced garlic and cook for 30 seconds until fragrant.
Stir in honey, soy sauce, and apple cider vinegar. Simmer for 2-3 minutes until slightly thickened.
Return the pork chops to the skillet, coating them in the sauce. Cook for another minute, then remove from heat.
Step 4: Serve and Enjoy
Plate the mashed potatoes and place the glazed pork chops on top. Drizzle extra sauce over the dish and garnish with fresh parsley.
