Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken thighs skin-side down and cook for about 7-8 minutes, or until the skin is crispy and golden. Flip the chicken thighs and cook for an additional 5-6 minutes until cooked through. Remove the chicken from the skillet and set aside.
Make the Honey Garlic Glaze:
In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Stir in the honey, soy sauce, and apple cider vinegar. Bring the mixture to a simmer and cook for about 3-4 minutes, until the glaze thickens slightly.
Glaze the Chicken:
Return the chicken thighs to the skillet, skin-side up. Spoon the glaze over the chicken and allow it to simmer in the sauce for 2-3 minutes, turning the chicken to coat evenly with the honey garlic glaze.
Serve:
Transfer the chicken to a serving platter and garnish with fresh chopped parsley. Serve immediately with your favorite sides, such as rice, vegetables, or mashed potatoes.
