In a small bowl, combine the warm water, sugar, and yeast. Stir to dissolve and let it sit for 5-10 minutes, or until it becomes frothy. This means the yeast is activated and ready to use.
Prepare the Dough:
In a large mixing bowl, combine the flour and salt. Add the melted butter and the yeast mixture.
Mix until the dough starts to come together, then turn it out onto a lightly floured surface. Knead the dough for about 5-7 minutes, or until it’s smooth and elastic.
Lightly oil a bowl and place the dough in it. Cover with a clean towel and let it rise for about 1 hour, or until it doubles in size.
Shape the Pretzels:
Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper or a silicone baking mat.
Punch down the dough and divide it into 8 equal pieces.
Roll each piece into a long rope, about 18 inches long. Form each rope into a pretzel shape by making a loop, twisting the ends over, and folding them down into the center. Pinch the ends tightly to secure the shape.
Boil the Pretzels:
Bring the 10 cups of water to a boil in a large pot. Once boiling, add the baking soda to the water.
Carefully drop each pretzel into the boiling water, one at a time, and boil for about 30 seconds. Use a slotted spoon to remove the pretzels and place them on the prepared baking sheet.
Bake the Pretzels:
Brush the tops of the pretzels with a little melted butter. Sprinkle them generously with coarse sea salt.
Bake in the preheated oven for 12-15 minutes, or until the pretzels are golden brown and have a slight sheen to them.
Serve:
Let the pretzels cool slightly before serving. Enjoy them warm, dipped in mustard, cheese sauce, or simply on their own!
