In a bowl, mix warm water, sugar, and yeast. Let sit for 5–10 minutes until it becomes foamy.
Make the Dough:
In a large mixing bowl, combine flour and salt.
Add the yeast mixture, softened butter, and one egg. Mix until a dough forms.
Knead the Dough:
Transfer the dough to a floured surface and knead for 8–10 minutes, until smooth and elastic.
Place the dough in a greased bowl, cover, and let it rise for 1–1.5 hours, or until doubled in size.
Shape the Buns:
Punch down the dough and divide it into equal-sized balls (about 8–10 pieces).
Shape each into a smooth bun and place on a lined baking tray. Cover and let rise for 30 minutes.
Bake the Buns:
Preheat the oven to 375°F (190°C).
Brush the buns with the egg yolk and milk mixture for a shiny golden crust.
Bake for 15–18 minutes, or until golden brown.
Cool & Serve:
Let the buns cool on a wire rack before serving. Enjoy with butter, jam, or as burger buns!
