Homemade Smoky Chickpea & Lentil Sausage with a Kick

In a small bowl, mix flaxseed meal and water. Let it sit for about 5 minutes to thicken.
Mix the Base:

In a large mixing bowl, combine mashed chickpeas, cooked lentils, oat flour, chickpea flour, and all the dry spices (smoked paprika, cumin, chili powder, cayenne pepper, black pepper, salt, oregano). Stir until well combined.
Incorporate Wet Ingredients:

Add chopped onion, minced garlic, olive oil, soy sauce, tomato paste, apple cider vinegar, and the flaxseed mixture to the bowl. Mix everything together until you have a thick, moldable dough.
Shape the Sausages:

Divide the mixture into equal portions and roll each portion into a sausage shape.
Wrap and Steam:

Tightly wrap each sausage in parchment paper or foil, twisting the ends to secure them. Steam the sausages over medium heat for 30 minutes.
Cool and Crisp Up:

Let the sausages cool slightly before unwrapping. For an extra crispy texture, pan-fry them in a little oil until golden and crisp on all sides.
Serve & Enjoy:

Serve these sausages in a bun, on top of rice, or crumbled into tacos. They’re bold, flavorful, and ready to elevate any meal!
