Drain excess grease, then add the taco seasoning and water. Simmer for 2–3 minutes until thickened. Set aside.
2. Crisp the Tortillas:
Preheat the oven to 375°F (190°C).
Place tortillas on a baking sheet and bake for 5–7 minutes per side until crispy.
Alternatively, lightly fry in a pan with a small amount of oil for extra crunch.
3. Assemble the Pizzas:
Spread a layer of refried beans over 3 tortillas.
Top with a layer of seasoned ground beef.
Place another crispy tortilla on top.
Spread a thin layer of enchilada sauce over the top tortilla.
Sprinkle with cheddar cheese and pepper-jack cheese.
4. Bake Until Melty:
Bake for 8–10 minutes, or until the cheese is melted and bubbly.
5. Garnish & Serve:
Top with diced Roma tomato, green onion, and black olives.
Slice and serve warm!
