Homemade Meatloaf with Tomato Glaze and Fried Potatoes with Mushrooms and Onions

In a large bowl, combine ground beef, chopped onion, garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, oregano, thyme, salt, and pepper.
Mix well until all ingredients are incorporated.
Shape the meat mixture into a loaf and place it in a greased baking dish.
2. Make the Tomato Glaze:

In a small bowl, whisk together ketchup, brown sugar, apple cider vinegar, Dijon mustard, and cayenne pepper (if using).
Brush the glaze generously over the top of the meatloaf.
3. Bake the Meatloaf:

Place the meatloaf in the preheated oven and bake for about 45-50 minutes, or until the internal temperature reaches 160°F (71°C) and the glaze is set.
4. Prepare the Fried Potatoes with Mushrooms and Onions:

While the meatloaf is baking, heat olive oil and butter in a large skillet over medium heat.
Add the diced potatoes and cook, stirring occasionally, for about 15-20 minutes, until they are golden and crispy.
Add the sliced onions and mushrooms to the skillet. Continue to cook for an additional 5-7 minutes, until the vegetables are softened and caramelized. Season with salt and pepper to taste.
5. Serve:

Slice the meatloaf and serve it alongside the fried potatoes, mushrooms, and onions. Garnish with fresh parsley if desired.
