Homemade Fruit and Nut Oatmeal Bars

Preheat your oven to 350°F (175°C).

Line a baking pan (9×9 inch or similar size) with parchment paper or lightly grease it to prevent sticking.

Step 2: Mix Wet Ingredients
In a small saucepan, melt the oil over low heat (if using coconut oil or butter).

Stir in the honey and vanilla extract (if using). Remove from heat once everything is melted and combined.

Step 3: Combine Dry Ingredients
In a large bowl, combine the rolled oats, dried fruits, nuts, salt, and cinnamon (if using). Mix everything together.

Step 4: Combine Wet and Dry Ingredients
Pour the melted wet ingredients into the dry ingredient mixture. Stir until the oats are evenly coated and the mixture is sticky. If it seems too dry, add a splash of milk or water to help it stick together.

Step 5: Press into Pan
Pour the mixture into the prepared baking pan. Use a spoon or your hands to firmly press it down into an even layer.

Step 6: Bake
Bake for 15-20 minutes or until the edges are golden brown and the bars are firm to the touch.

Remove from the oven and allow to cool completely in the pan before cutting into squares or bars.

Step 7: Serve
Enjoy immediately or store in an airtight container for up to a week. These bars are perfect for a quick breakfast or snack!
