Activate the yeast: In a small bowl, combine the warm water, warm milk, and sugar. Sprinkle the yeast over the liquid and let it sit for about 5-10 minutes until it becomes foamy.
Mix the dough: In a large bowl, combine the flour and salt. Pour the activated yeast mixture into the flour and add the softened butter. Mix until the dough starts to come together.
Knead the dough: Transfer the dough onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.
Let it rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.
Shape the bread: Once the dough has risen, punch it down and transfer it onto a floured surface. Shape the dough into a loaf or smaller individual rolls.
Second rise: Place the shaped dough onto a greased baking tray and cover it again. Let it rise for another 30 minutes.
Bake: Preheat the oven to 375°F (190°C). If desired, brush the top of the dough with a beaten egg for a shiny finish. Bake for 25-30 minutes or until golden brown on top.
Cool and enjoy: Let the bread cool on a rack before slicing. Enjoy this soft and tender Cortadillo bread fresh out of the oven or with your favorite spreads.
