Add the chilled butter slices into the dry ingredients. Using a pastry cutter, two forks, or your fingers, work the butter into the flour mixture until the mixture resembles coarse crumbs with small pea-sized pieces of butter remaining.
Step 4: Add Buttermilk
Pour in the cold buttermilk and stir gently with a spoon or spatula until just combined. Do not overmix, as this can lead to dense biscuits.
Step 5: Shape the Biscuits
Turn the dough out onto a lightly floured surface. Gently fold the dough over on itself 3-4 times to help create flaky layers, then pat it into a rectangle about 1-inch thick.
Using a round biscuit cutter, cut out the biscuits. Press straight down without twisting to ensure they rise properly. Gather any leftover dough, re-pat it, and cut out additional biscuits.
Step 6: Bake the Biscuits
Place the biscuits on the prepared baking sheet, close together but not touching.
Brush the tops with the reserved 2 tablespoons of buttermilk for a golden finish.
Bake for 10-12 minutes, or until the biscuits are golden brown on top.
Step 7: Serve
Remove the biscuits from the oven and let them cool slightly on a wire rack.
