Shape the bars:
Line a baking sheet with parchment paper. Take about 1-2 tablespoons of the coconut mixture and shape it into small bars or logs. Place each bar on the prepared sheet. Once all bars are formed, refrigerate for about 30 minutes to set.
Melt the chocolate:
While the coconut bars cool, melt the chocolate. In a microwave-safe bowl, heat the chocolate in 20-second intervals, stirring after each interval until smooth and fully melted.
Coat the bars in chocolate:
Once the bars are firm, dip each coconut bar into the melted chocolate, ensuring it’s fully coated. Use a fork to lift the bar out, letting any excess chocolate drip off. Place the chocolate-coated bars back on the parchment-lined baking sheet.
Chill and set:
Return the bars to the refrigerator for 20-30 minutes or until the chocolate has completely set.
