High Protein Crispy Garlic Chicken Fried Rice: A Flavor-Packed Power Meal

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the diced chicken breasts, season with a pinch of salt and pepper, and cook for 6-8 minutes, stirring occasionally, until the chicken is fully cooked and browned. Remove the chicken from the skillet and set it aside.
In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
Push the garlic to the side of the skillet and pour the beaten eggs into the empty space. Scramble the eggs until fully cooked, then mix them with the garlic.
Add the cooked rice to the skillet and break up any clumps with a spatula. Stir everything together.
Stir in the thawed peas and carrots, soy sauce, sesame oil, black pepper, and cooked chicken. Let the rice sit undisturbed for 2-3 minutes to get a crispy layer on the bottom.
Stir everything to combine and cook for another 2-3 minutes, ensuring the rice is evenly coated in the sauce and crispy in places.
Remove from heat and sprinkle with chopped green onions before serving.
