Herb-Roasted Chicken with Stuffing & Roasted Veggies

Preheat oven to 400°F (200°C).

Rub chicken with olive oil, garlic powder, oregano, paprika, salt, and black pepper.

Place the chicken on a baking tray and roast for 40-45 minutes, flipping halfway through, until golden and crispy.

Roast the Vegetables & Potatoes:

Toss chopped veggies with olive oil, Italian seasoning, salt, and black pepper.

Toss sliced potatoes with olive oil, garlic powder, thyme, salt, and pepper.

Spread the vegetables and potatoes on a baking sheet and roast for 25-30 minutes, stirring occasionally, until tender and slightly caramelized.
