Hearty Vegetable Stew

Chop the cabbage, slice the carrot, and chop the bell pepper, onion, zucchini, and potatoes.

Sauté the Aromatics:

In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic and sauté for about 2-3 minutes until softened and fragrant.

Add the Vegetables:

Add the chopped cabbage, carrots, bell pepper, potatoes, and zucchini to the pot. Stir to combine with the onion and garlic mixture.

Add the Broth and Seasoning:

Pour in the vegetable broth (or water), and stir in the dried thyme, oregano, salt, and black pepper. Bring to a boil.

Simmer the Stew:

Reduce the heat to low, cover the pot, and let the stew simmer for 20-25 minutes or until the vegetables are tender and the flavors meld together.

Add Tomatoes and Simmer:

Add the can of diced tomatoes and stir to combine. Continue to simmer for another 5-10 minutes to heat through and thicken slightly.

Serve:

Ladle the stew into bowls, garnish with fresh chopped parsley, and enjoy!
