Heat the olive oil in a large skillet over medium heat.
Sauté the chopped onion for 3–4 minutes until softened and slightly golden.
Add the ground beef, breaking it up with a spoon. Season with salt, black pepper, and garlic powder. Cook until browned and fully cooked through.
Stir in the grated carrot, and cook for another 2–3 minutes until softened.
Add the shredded cabbage, mixing everything well. Cook for about 8–10 minutes, stirring occasionally, until the cabbage is tender but still has a bit of bite.
Taste and adjust seasoning as needed.
Serve hot as a main dish or side.
