Heat olive oil in a large skillet over medium heat. Add the thinly sliced potatoes, seasoning them with salt, and sauté for 5-7 minutes until they start to soften but don’t brown. Set them aside.
Cook the Meat and Vegetables:
In the same skillet, add a little more olive oil and sauté the chopped onions, bell pepper, and garlic until softened, about 5 minutes.
Add the ground meat to the skillet, breaking it up as it cooks. Cook until browned and fully cooked through.
Stir in the peas, thyme, black pepper, and any other seasonings of your choice. Let the mixture cool slightly.
