Hearty Potato Cake in the Pan

Peel and dice the potatoes into small cubes.

Boil the diced potatoes in a pot of salted water until tender, about 10-12 minutes.

Drain the potatoes and mash them lightly with a fork or potato masher. Let them cool for a few minutes.

Make the Potato Mixture:

In a large bowl, combine the mashed potatoes, chopped mortadella or ham, egg, flour, and a pinch of pepper. Mix well until everything is incorporated and you have a thick mixture.

Form the Potato Cakes:

Heat vegetable oil in a large skillet over medium heat.

Scoop out portions of the potato mixture and shape them into patties with your hands.

Place the patties in the hot skillet and cook for 4-5 minutes on each side, or until golden brown and crispy.

Add Cheese (Optional):

If desired, place a slice of cheese on each potato cake during the last minute of cooking, allowing it to melt over the top.

Serve:

Serve the potato cakes warm, garnished with fresh greens for a refreshing contrast.
