Hearty Lentil and Chorizo Soup – A Flavorful Comfort for Chilly Days

Rinse the lentils under cold water, and set them aside.
Dice the potatoes and carrots, chop the onion, and mince the garlic. Cut the chorizo into small pieces.
Step 2: Sauté the Aromatics
In a large pot, heat the olive oil over medium heat.
Add the diced onion and carrots, and sauté for 5-7 minutes, until they begin to soften.
Add the minced garlic and sauté for another 1-2 minutes until fragrant.
Step 3: Add the Chorizo
Stir in the diced chorizo, cooking until it begins to brown and releases its oils, about 5 minutes.
Step 4: Simmer the Soup
Add the rinsed lentils, diced potatoes, smoked paprika, and broth to the pot.
Stir well to combine and bring the soup to a boil.
Reduce the heat to low, cover, and let it simmer for 30-40 minutes, or until the lentils and potatoes are tender.
Step 5: Season and Serve
Taste the soup and adjust seasoning with salt and pepper as needed.
Ladle the soup into bowls and garnish with fresh parsley.
Serve with crusty bread on the side to soak up all the delicious flavors!
