In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, thyme, salt, and pepper. Mix well until everything is fully incorporated.
Transfer the mixture into a greased loaf pan and shape it into a loaf.
Bake for 45-50 minutes, or until the internal temperature reaches 160°F (70°C). Once done, let the meatloaf rest for 10 minutes before slicing.
Step 2: Make the Onion Gravy
While the meatloaf is baking, melt the butter in a skillet over medium heat.
Add the onions and cook, stirring frequently, until they become golden and caramelized, about 10-12 minutes.
Add the garlic and cook for another minute.
Sprinkle the flour over the onions and cook for 1-2 minutes, stirring constantly.
Gradually pour in the beef stock while stirring to prevent lumps.
Add Worcestershire sauce and cook until the gravy thickens, about 5 minutes.
Season with salt and pepper to taste.
Step 3: Serve
Slice the meatloaf and place on serving plates.
Pour the onion gravy generously over the top.
Garnish with fresh parsley.
