Healthy Zucchini & Egg Breakfast

Heat a non-stick skillet over medium heat and lightly grease with olive oil. Slice the zucchini into thin rounds and add them to the skillet. Sauté for about 3-5 minutes, or until they begin to soften.

2. Cook the Eggs
Crack the eggs into the skillet, over the sautéed zucchini, and season with a pinch of salt. Allow the eggs to cook to your desired level (scrambled, sunny-side-up, or however you prefer). Stir gently if you want scrambled eggs.

3. Add the Tomato
Once the eggs are cooked, sprinkle the diced tomato over the top and allow it to warm through for 1-2 minutes.

4. Serve and Enjoy
Serve immediately while hot. You can garnish with fresh herbs like basil or parsley if desired.
