Preheat the oven to 400°F (200°C). Cook pasta to al dente according to package instructions, then drain.
Sauté the vegetables: In a large pan, heat 2 tbsp of olive oil over medium heat. Add the minced garlic and diced onion (if using), sauté for 2 minutes until fragrant.
Cook the veggies: Add the chopped bell pepper, carrots, and olives to the pan. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
Add spinach and tuna: Stir in the spinach and cook until wilted. Then add the drained tuna and tomato sauce. Season with salt and pepper to taste, and stir well to combine.
Combine with pasta: Transfer the tuna and vegetable mixture to a large baking dish. Add the cooked pasta and stir until the pasta is evenly coated with the sauce.
Top with cheese: Sprinkle the grated cheddar cheese over the top of the casserole, spreading it evenly.
Bake: Place the dish in the preheated oven and bake for 15 minutes, or until the cheese is melted and slightly browned.
Serve: Remove from the oven and garnish with fresh basil or green onion, if desired. Serve hot and enjoy!
