If using regular pasta, cook according to the package instructions. Drain and set aside.
Step 2: Prepare the Zucchini Noodles
Heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add zucchini noodles and sauté for about 2–3 minutes until tender but not mushy. Remove from heat and set aside.
Step 3: Make the Sauce
In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat.
Add the diced onion and sauté for 3–4 minutes until softened.
Add minced garlic and cook for an additional 30 seconds.
Add the cherry tomatoes (or crushed tomatoes), oregano, and red pepper flakes (if using).
Simmer for 5–7 minutes until the sauce has thickened slightly. Season with salt and pepper to taste.
Step 4: Combine
Toss the cooked pasta with the zucchini noodles and the tomato sauce. Mix well.
Step 5: Serve
Garnish with fresh basil, if desired, and serve immediately.
