Healthy Spinach Herb Baked Chicken Recipe: A Flavorful, Nutritious Dinner

Preheat your oven to 375°F (190°C).
Lightly grease a baking dish with olive oil spray or drizzle with olive oil to prevent sticking.
Prepare the spinach mixture:

In a medium bowl, combine the chopped spinach, cream cheese (or Greek yogurt), Parmesan cheese, minced garlic, lemon juice, oregano, basil, salt, and pepper. Mix well until the spinach is evenly coated and the mixture is smooth.
Prepare the chicken:

Place the chicken breasts on a clean surface or cutting board.
Use a sharp knife to carefully cut a small pocket in the center of each chicken breast (do not cut all the way through).
Stuff the chicken breasts with the spinach herb mixture, ensuring each breast is filled evenly.
Bake the chicken:

Place the stuffed chicken breasts in the prepared baking dish.
Lightly spray the chicken with olive oil or drizzle with a small amount of olive oil for extra moisture.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the filling is bubbly and golden.
Serve:

Remove the chicken from the oven and let it rest for a few minutes.
Garnish with freshly chopped parsley if desired.
Serve hot with your favorite sides, such as roasted vegetables, quinoa, or a simple salad.
