Healthy Oatmeal and Spinach Skillet

In a medium-sized pot, cook the oatmeal according to package instructions, using water or your preferred milk. Once cooked, set it aside.

Cook the Spinach:
Heat a small amount of avocado oil in a skillet over medium heat. Add the chopped spinach and cook for 2-3 minutes until wilted. Season with salt and garlic powder to taste.

Combine Ingredients:
Add the cooked oatmeal to the skillet with the spinach. Stir in the chives and shredded mozzarella cheese, allowing the cheese to melt and the mixture to come together.

Make the Eggs:
In a separate bowl, beat the eggs and season with a pinch of salt. Pour the eggs into the skillet with the oatmeal and spinach mixture. Stir gently until the eggs are scrambled and cooked through.

Finish the Dish:
Stir in the yogurt for a creamy texture and adjust the seasoning with more salt or garlic powder as needed.

Serve:
Once everything is well-mixed and cooked, remove from heat and serve hot. Garnish with extra chives or a dollop of yogurt if desired.
