Healthy Nut and Seed Cookies: Flourless and Sugar-Free Delight

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Prepare the Cookie Dough:

In a large mixing bowl, combine the chopped nuts, sunflower seeds, chia seeds, flaxseeds, and coconut flakes (if using). Stir well to combine.
In a separate bowl, mix the almond butter, melted coconut oil, vanilla extract, cinnamon (if using), and a pinch of salt. Stir until smooth and well combined.
Pour the wet ingredients into the bowl with the dry ingredients. Mix thoroughly to form a dough. If the mixture is too dry, add 1-2 tablespoons of water until it holds together.
Shape the Cookies:

Using your hands, form the dough into small balls (about 1 tablespoon each) and place them on the prepared baking sheet. Flatten each ball slightly with a fork or the back of a spoon to shape the cookies.
Bake the Cookies:

Bake in the preheated oven for 12-15 minutes or until the edges are golden brown and the cookies are firm to the touch.
Cool and Serve:

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
