Healthy Flatbreads with Kefir and Spring Onion

Prepare the Batter:
In a large bowl, crack 4 eggs and whisk them together. Add the finely chopped spring onion, the additional egg, salt, pepper, and baking powder. Mix well.

Add the Kefir/Yogurt:
Pour in the kefir or thick yogurt and continue to mix until smooth and fully combined.

Add the Flour:
Gradually stir in the flour until you have a thick batter-like consistency. Make sure there are no lumps.

Cook the Flatbreads:
Heat a non-stick pan over medium heat and drizzle a little olive oil to coat the bottom. Scoop a spoonful of batter into the pan, spreading it out into a circle.

Fry Until Golden:
Cook for 2-3 minutes on each side, or until the flatbread is golden brown and cooked through. Repeat with the rest of the batter.

Serve:
Serve the flatbreads warm with your favorite healthy dip or a side of vegetables.
