Healthy Energy Cookies (No Sugar, No Flour)

Begin by chopping the dried apricots into small pieces to make them easier to incorporate into the cookie mixture.

Roughly chop the walnuts, hazelnuts, almonds, and pine nuts to smaller pieces.

If you have a food processor, you can pulse the nuts and seeds together to make the texture finer, or you can leave them coarser depending on your preference.

Mix Ingredients:

In a large mixing bowl, combine all the chopped nuts and seeds with the dried apricots.

Add the flaxseeds, sesame seeds, pumpkin seeds, and sunflower seeds to the mix.

Form the Cookie Dough:

Using your hands, mix the ingredients well until everything is evenly distributed.

If the mixture feels too dry and doesn’t stick together, add a little water, one teaspoon at a time, until it holds together well. You can also add a small amount of coconut oil or nut butter if you like.
