Healthy Carrot Cake

Preheat your oven to 180°C (350°F).

Grease your baking mold with a little olive oil or line it with parchment paper.

Grate the carrots and apples using a fine grater.

2. Mix the Dry Ingredients:
In a large bowl, combine the oatmeal, baking powder, and a pinch of sweetener (Stevia).

Stir in the raisins and dried apricots.

3. Combine the Wet Ingredients:
In a separate bowl, whisk together the eggs, water, and vanilla extract until smooth.

Add the grated carrots and apples into the wet ingredients, stirring until fully combined.

4. Combine the Wet and Dry Mixtures:
Gradually add the wet mixture into the dry ingredients, stirring until everything is evenly incorporated.

5. Bake the Cake:
Pour the batter into the prepared baking mold.

Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

6. Cool and Serve:
Let the cake cool in the mold for about 10 minutes, then transfer it to a wire rack to cool completely.

Slice and serve as a healthy snack or dessert!
