Healthy Carrot Cake | A Nutritious Twist on a Classic Favorite

Grate the carrots and apples. Chop the dried apricots into small pieces. In a small bowl, soak the dried apricots in warm water for about 10 minutes to soften them up.

Mix the Wet Ingredients:
In a large mixing bowl, beat the eggs and add the stevia to taste. Mix until smooth, and then stir in the vanilla extract and water.

Combine the Dry Ingredients:
In another bowl, mix the oatmeal, baking powder, raisins, and soaked apricots. Add the grated carrots and apples to the dry mixture, stirring to combine.

Make the Batter:
Add the wet mixture to the dry ingredients and mix everything together until well incorporated. The batter should be thick but easily spoonable.

Prepare the Baking Pan:
Grease a cake mold or baking dish with a little olive oil to prevent sticking. Pour the batter into the mold and spread it evenly.

Bake:
Preheat your oven to 350°F (175°C). Bake the cake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

Cool and Serve:
Let the carrot cake cool for 10-15 minutes before slicing and serving. Enjoy it as a snack, dessert, or even as a healthy breakfast option!
