Heat olive oil in a pan over medium heat.
Add the sliced zucchini, season with salt and black pepper, and sauté for 3-4 minutes until tender. Remove and set aside.
In the same pan, add the mushrooms and cook for 2 minutes. Then add the spinach and cook for another minute until wilted. Remove and set aside.
2️⃣ Make the Omelet:
Whisk together the eggs, milk, salt, and black pepper in a bowl.
Heat a small pan over medium heat with a bit of butter or olive oil.
Pour the egg mixture into the pan and cook until the edges set.
Add the sautéed spinach and mushrooms on one side, then fold the omelet over. Cook for another 1-2 minutes to finish cooking the center.
3️⃣ Cook the Sausages & Toast the Bread:
In the same pan, cook sausages according to package instructions.
Toast the bread slices to your liking.
4️⃣ Assemble & Serve:
Plate the omelet with the sautéed zucchini, grilled sausages, diced tomatoes, and toast.
Garnish with black pepper and enjoy!
