Healthy Banana Carrot Oat Muffins

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.

In a large bowl, mash the bananas until smooth.

Add the eggs and whisk until combined.

Stir in the grated carrots and oats, mixing well.

2️⃣ Combine Dry Ingredients:
In a separate bowl, whisk together flour, brown sugar, baking powder, and cinnamon.

Gradually fold the dry ingredients into the wet mixture, stirring until just combined. Avoid overmixing.

3️⃣ Bake the Muffins:
Divide the batter evenly among the muffin cups, filling them about ¾ full.

Sprinkle extra rolled oats on top for texture.

Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.

4️⃣ Cool & Serve:
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack.

Enjoy warm or store for later!
