Hawaiian Pineapple Chicken and Rice Skillet | A Sweet and Savory One-Pan Meal

Heat the olive oil in a large skillet over medium heat.

Add the cubed chicken breast and season with salt, pepper, garlic powder, and ground ginger.

Cook for about 5-7 minutes, until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

Sauté the Onion:

In the same skillet, add the diced onion and cook for 2-3 minutes until softened and translucent.

Add the Rice:

Stir in the rice and cook for 1-2 minutes to lightly toast it, stirring occasionally.

Add the Liquids:

Pour in the chicken broth, soy sauce, and honey (or brown sugar). Stir to combine. Bring to a simmer.

Simmer the Rice:

Cover the skillet and reduce the heat to low. Let it cook for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

Add the Pineapple and Chicken:

Stir in the cubed pineapple and cooked chicken. Cook for an additional 2-3 minutes, just to heat everything through and allow the pineapple to release its juices into the rice.

Garnish and Serve:

Remove from heat and garnish with fresh parsley or green onions for a burst of color and freshness.

Serve warm and enjoy the sweet and savory flavors!
