Ham, Cheese, and Egg Muffin Cups

Preheat your oven to 375°F (190°C).

Grease a muffin tin with vegetable oil or non-stick spray to ensure the muffin cups do not stick.

Prepare the Bread Base:

Cut the bread slices into halves or quarters, depending on the size of your muffin cups. You want the bread pieces to fit comfortably at the bottom of each muffin cup.

Press each piece of bread into the bottom of the muffin tin, forming a base.

Layer with Ham and Cheese:

Place a slice of ham into each muffin cup, making sure it covers the bread base.

Add a slice of cheese on top of the ham, followed by a generous sprinkling of grated cheese for extra cheesiness.

Add the Egg:

Crack one egg into each muffin cup on top of the ham and cheese layers. Be careful not to break the yolk.

Season with salt and optional black pepper to taste.

Bake:

Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the eggs are cooked to your liking. For runny yolks, check at around 15 minutes; for firm yolks, bake a little longer.

Serve:

Remove the muffin cups from the oven and allow them to cool for a few minutes.

Garnish with fresh herbs if desired, and serve immediately.
