Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Puff Pastry:
Roll out the puff pastry sheet on a lightly floured surface and cut it into 6 equal rectangles.
Assemble the Pockets:
Spread a thin layer of Dijon mustard (if using) on each pastry piece.
Place a slice of ham and a slice of cheese on half of the pastry pieces.
Sprinkle with garlic powder and black pepper.
Cover each with another piece of puff pastry, pressing the edges to seal.
Use a fork to crimp the edges for a decorative and secure seal.
Apply Egg Wash:
Whisk the egg with 1 tbsp of milk (if using) and brush the top of each pocket with the egg wash for a golden finish.
Bake:
Arrange the pastries on the prepared baking sheet and bake for 15–18 minutes, or until golden brown and puffed up.
Serve:
Let the puff pastry pockets cool slightly before serving. Optionally, brush the tops with melted butter for extra flavor.
